Domaine Jean-Marc Boillot Allocation, Varied Vintages
Jean-Marc Boillot is one of the rare Burgundian producers equally celebrated for both red and white wines. After initially leaving the family domaine to serve as winemaker for Olivier Leflaive, Boillot returned to establish his own label in 1985. Crucial to this move was the inheritance of prized Puligny-Montrachet vineyards from his maternal grandfather, the legendary Étienne Sauzet—some of the region’s finest terroirs. Combined with holdings from the Boillot side, this formed the foundation for one of the Côte de Beaune’s most respected domaines. The domaine is now in the capable hands of his daughter, Lydie Boillot, and her husband François Alzingre, who have worked alongside Jean-Marc for many years and now lead day-to-day operations.

Viticultural practices reflect a belief in the power of mature vines—ideally 40 years old—and a commitment to sustainability. Some of the vines in La Garenne and Les Combettes were planted by Étienne Sauzet himself and are still in production. High-density planting (12,000 vines per hectare), deep ploughing to encourage root depth, and high-trained canopies (1.2m) help balance ripeness and preserve freshness by shading the fruit. In the cellar, white wines are barrel-fermented with regular bâtonnage and undergo full malolactic fermentation, resulting in Puligny-Montrachet and Meursault of notable texture, elegance, and mineral tension. Red wines, sourced from Premier Cru sites in Volnay, Beaune, and Pommard, are fully destemmed and vinified with gentle extraction, preserving finesse and purity. The wines of Jean-Marc Boillot are impeccably balanced, with a style that showcases ripe fruit without excess, and structure without austerity. Key terroirs include Les Referts, Champ Canet, Combettes, and La Garenne in Puligny-Montrachet; Les Jarollières in Pommard; and Carelle sous la Chapelle in Volnay—all sites that reward cellaring and highlight the domaine’s precision-driven approach. We have a limited selection of these wines available stateside on our site through Sunday, July 6th, and we are happy to hold on shipping until the weather cools this fall.

Puligny-Montrachet, 1er Cru Champ-Canet: Jean-Marc Boillot’s Puligny-Montrachet 1er Cru “Champs Canet” comes from old vines (planted 1901–1960) on high-elevation, east-facing slopes just above “Les Combettes.” Fermented and aged 11 months in oak (15–30% new) with regular bâtonnage, it combines richness with bright acidity and refined structure. The wine layers citrus, peach, and panna cotta notes with warm toffee and fresh baguette on the finish—balanced, expressive, and cellar-worthy.

Puligny-Montrachet, 1er Cru Les Combettes: Jean-Marc Boillot’s Puligny-Montrachet 1er Cru “Les Combettes” comes from mid-slope vines planted in 1944–1945 on classic clay-limestone soils in north Puligny. Aged 11 months in oak (15–30% new) with lees stirring, the wine combines power and finesse, showing silky texture and Grand Cru-like elegance. Perfumed with rose petals and tropical fruit, it finishes with vibrant acidity and a lasting note of tangy pineapple, built to age.

Puligny-Montrachet: Jean-Marc Boillot’s Puligny-Montrachet blends fruit from several south Puligny lieux-dits just below Bâtard-Montrachet, with vines dating from 1949 to 1992. Aged 11 months on lees in 15–30% new oak, it offers layered citrus, orchard blossom, ripe stone fruit, and subtle oak spice. Saline, vibrant, and expressive of its terroir, this wine captures classic Puligny charm with precision and freshness—ideal for near- to mid-term cellaring, nearing a window of peak drinkability.

Puligny-Montrachet, 1er Cru Les Referts: The Puligny-Montrachet 1er Cru “Les Referts” comes from old vines (planted 1951–1960) at the foot of the slope in north Puligny on clay-limestone soils. Aged 11 months on lees with bâtonnage in 15–30% new oak, the wine undergoes full malolactic fermentation to enhance texture and depth. It opens with lemon sherbet and lime, unfolding into a chalky, tensile palate with impressive length.

Montagny, Premier Cru: Jean-Marc Boillot’s Montagny Premier Cru 2022 is made from 100% Chardonnay grown in the limestone- and clay-rich soils of Montagny, a southern Côte Chalonnaise appellation known for producing expressive white wines at an accessible price point. The grapes are hand-harvested and gently pressed as whole clusters, with the juice settled and preserved on its fine lees to maintain freshness and depth. Fermentation takes place entirely in oak barrels using selected yeasts, followed by full malolactic fermentation. The wine is aged for 11 months without racking, with regular bâtonnage every 7 to 10 days, and matured in 15–30% new oak to enhance richness and texture. Bottled at the estate, this refined Premier Cru offers both immediate appeal and aging potential through 2031.

Mâcon-Lugny Les Genièvres: The Mâcon-Lugny “Les Genièvres” is sourced from south-facing clay-limestone slopes in Lugny, with vines ranging from 1931 to 2005. Aged 10 months in oak (15–30% new) followed by 2 months in vat, the wine undergoes full malolactic fermentation and regular bâtonnage for added richness. It offers bright lime and tropical fruit aromas, a creamy mid-palate, and refreshing acidity.

Mâcon-Villages: Jean-Marc Boillot’s 2023 Mâcon-Villages is a barrel selection blend from multiple south-facing plots at 240–350m altitude, all planted to 100% Chardonnay. Fermented and aged in oak (15–30% new) with regular bâtonnage, it spends 10 months in barrel and 2 months in vat for balance and freshness. Pale lemon in color, the wine offers a stylish nose, vibrant attack, and a richer, rounded finish—ideal for early enjoyment through 2026.

Pommard, 1er Cru Jarollières: Jean-Marc Boillot’s Pommard 1er Cru “Jarollières” comes from old vines planted between 1929 and 1945 on mid-slope, east-facing clay-limestone soils with stratified scree. The wine is crafted with full destemming, cold maceration, and gentle extraction, then aged 13 months in oak barrels (30% new), preserving structure and finesse. With a production of 45 hl/ha, it delivers concentrated Pinot Noir character with depth, aging potential, and classic Pommard intensity.

Volnay, 1er Cru Pitures: Jean-Marc Boillot’s Volnay Premier Cru “Les Pitures” originates from a 300 m altitude, east/southeast-facing parcel with clay‑limestone soils and nearly 75‑year‑old vines, producing around 54 hl/ha. The wine was made with full destemming, gentle cold maceration for 6–8 days, followed by high-temperature fermentation and 12 months in French oak (30% new), plus a further 3 months in stainless steel. Refined, structured, and expressive, it’s built for aging, with cellaring potential through at least 2032+.

Volnay, 1er Cru Carelle sous la Chapelle: Jean-Marc Boillot’s Volnay 1er Cru “Carelle sous la Chapelle” comes from old vines planted in 1958 on clay-limestone soils at 260m altitude. Fully destemmed and gently extracted, the wine is aged 12 months in French oak (approx. 30% new) followed by 3 months in stainless steel for clarity and balance. With its refined structure and vibrant fruit, this Premier Cru Pinot Noir offers great elegance.
2018 Volnay, 1er Cru Carelle sous la Chapelle
Beaune, 1er Cru Epenottes: Jean-Marc Boillot’s Beaune 1er Cru “Epenottes” comes from the far south of Beaune, with vines planted between 1981 and 2017 on classic clay-limestone soils. The wine is fully destemmed and gently vinified, then aged 12 months in French oak (approx. 30% new) followed by 3 months in stainless steel for clarity and balance. With a low yield of 32 hl/ha, it offers concentrated Pinot Noir character, refined structure, and aging potential. The elegant 2014s are showing beautifully.
